Well, that's amusing; but... "pickled" and "raw" are not the same thing.(and on a food show, of all the what's-it...)
He means raw as opposed to heat/flame having been applied to it. Different flavour profile - that's what he means. He's well aware of what pickling does. Zimmern knows more about food than you ever will.
I don't doubt that... I'm just... I have this thing about words, as you may know... not that I'm particularly good with them.
